Soak the white fungus for more than 1 hour.

After the water boils, turn off the low heat. There is a key point here. Do not cover the pot immediately after turning off the low heat. Wait for 1-2 minutes before covering the pot. Because the casserole heat is too strong, turn off the low heat and cover the pot immediately, but the water will still pour out after a while. Cover the pot and simmer for 5 minutes.

Turn off the heat---stuffy. This is the key to the glue coming out. I have tried it before and it is not stuffy. After stewing for a long time, the glue still doesn’t come out. The texture is still hard, not soft and waxy. So I didn’t like drinking white fungus sugar water at that time. The boring time is at least 30 minutes.

Turn on the heat again, bring to a boil, then turn to low heat and simmer for 30 minutes. Still be careful not to cover the pot immediately, as it would be a pity to save it. There is no need to simmer it for a long time, as the glue has already formed and is very thick and cannot be simmered any longer.
