Homemade chopped pepper
Overview
During the autumn harvest season, I saw the red peppers in the morning market two days ago. I couldn’t help but buy some and make some chopped peppers. They need to be marinated for a while and then fermented before eating. Now there is a large wave of chopped pepper delicacies in front of me, including steamed fish heads with chopped peppers, steamed pork ribs with chopped peppers, steamed chicken wings with chopped peppers, potato slices with chopped peppers, baby cabbage with chopped peppers... My mouth is watering just thinking about it

Wash the fresh red peppers and drain them.

Prepare 200 grams of garlic, peel it, and weigh out the sugar and salt.

Remove the stems from the peppers and chop them into small pieces with a knife, but not too finely chopped to have a grainy texture.

Add all chopped chili peppers to minced garlic, salt, sugar, a little minced ginger, and a little high-strength white wine.

The glass container is scalded with boiling water in advance, and then the chopped peppers are put into the bottle. Store at room temperature for 2 to 3 days, or in the refrigerator for 7 days before eating.
