Peel the pistachios and put them in a plastic bag, crush them into two or three pieces with a rolling pin and set aside.

Cut the rice cake into 1cm thick slices and set aside.

Put a little olive oil in the frying pan and fry the rice cake slices in the frying pan until both sides are soft and slightly brown.

Take two fried rice cake slices and spread a layer of red bean paste on them.

Stack two pieces of rice cake on top of each other, with the bean paste facing up. Spread the chopped pistachios evenly on the bean paste and press it lightly with your fingers.
