Fried winter bamboo shoots
Overview
My husband and I personally dug these winter bamboo shoots in the mountain bamboo forest. They are hard to find and they are all still underground. It’s like digging for treasure. It depends on luck, but it’s not bad. You can still find some, big and small. Nowadays, the food sold in the vegetable market is very expensive, so I am really trying it out.

This is the result of yesterday’s digging

Peel off the shell and wash it

Soak the fungus and tear it into small pieces

Sliced winter bamboo shoots

Put in boiling water, blanch the oxalic acid, remove and drain

Heat the oil pan, add the winter bamboo shoots and stir-fry until they change color slightly. When the pan is dry, add the cooking wine

Add the mushrooms and stir-fry

Add the fungus, add salt and stir well

Add a little light soy sauce, some hot water, cover and simmer for 5 minutes

Stew until cooked, add cucumber and stir-fry for 1 minute, add a little mushroom essence and serve
