Chop the cocoa liquor and cocoa butter and set aside

Pour the sugar and light cream into a cooking bowl and heat the water bath until the sugar is completely dissolved. Then turn off the fire and use the remaining heat of the water to keep it warm. Pour the chopped cocoa butter and cocoa liquid into the whipping cream, use a mixer to mix evenly.
