Cut the eggplant into about 1cm thick slices as shown in the picture, and then use a knife to cut out the little sun shape

Add oil to the pot, fry the eggplant until cooked, drain the oil

Leave some in the pot, stir-fry the minced ginger and garlic until fragrant, add more minced garlic, then add salt, chicken essence, soy sauce, then add the prepared eggplant, stir-fry evenly, cover the pot and simmer for about two minutes
