I bought three large dried eels weighing 5 pounds each.

Divide into segments.

Take a section, then divide into small pieces, soak for 5 hours, drain and set aside.

Hot pan and cold oil.

Heat the oil and put the eel.

Turn over when the color turns slightly yellow, and then shake to coat the fish pieces evenly with cooking oil.

Then fry it slowly.

Fry until golden brown.
