Snow clam stewed with rock sugar and snow pear

I soak snow clams for more than 10 hours. I change the water halfway. I usually use mineral water or filtered water instead of tap water

Peel and core the pear and cut into small pieces; peel the ginger and set aside

Put the snow clam, snow pear and ginger into a stew pot, add mineral water or filtered water to cover the stew. It depends on you. If you like to drink pear water, add more water. Otherwise, just cover the stew

Fasten the stew pot tightly and steam over water. Five minutes after the high heat is turned on, turn to low heat and simmer for forty minutes. Ten minutes before serving, add an appropriate amount of rock sugar. You can add less rock sugar first. Pears themselves are very sweet. If you feel it is not sweet enough after cooking, you can add rock sugar later

Add rock sugar and simmer for another ten minutes before taking it out of the pot. Let it cool slightly and drink it while it is still hot
