Shepherd's purse egg spring rolls

I picked some shepherd's purse in the wild yesterday, made dumplings last night, and fried some small spring rolls for noon today

  1. Wash the shepherd's purse, pour it through boiling water quickly, control the water and then chop it into small pieces

  2. Crack an egg into the bowl

  3. Beat the eggs and put them into an electric baking pan and spread them into egg skins

  4. Chop the egg skin and mix it with the shepherd's purse, add a little salt

  5. Prepare another small bowl and mix some starch water

  6. Take an appropriate amount of filling and place it on the wonton wrapper, as shown in the picture

  7. Roll it up once and then again, then fold it up on both sides, press down the folded edge with a little force with your hands, apply some water starch on the top edge, then roll it to the end and seal it

  8. Wrap all the small spring rolls in turn. The two small balls were kneaded by my daughter, haha

  9. Heat the oil and fry one by one until golden brown
