Black sesame glutinous rice balls
Overview
Yuanxiao is eaten on the fifteenth day of the first lunar month. It is called Yuanxiao in the north and glutinous rice balls in the south. Nowadays, there are more and more types of fillings for Yuanxiao, including sweet, salty, vegetable and fruit fillings, but I still have a special liking for black sesame fillings.

Steps
-
First prepare the black sesame seeds, sift the black sesame seeds to remove impurities, and fry the black sesame seeds over low heat until cooked.
-
After cooling slightly, use a food processor to grind the black sesame seeds into powder.
-
Ingredients for making glutinous rice balls: black sesame powder, glutinous rice flour, sugar, and honey.
-
After preparing the water to boil, slowly pour it into the glutinous rice flour, then knead it into a smooth dough, cover it with a damp cloth and let it sit for 20 minutes.
-
Add white sugar to black sesame powder and mix evenly.
-
Then add honey and mix well (add or subtract appropriately according to your preferred sweetness).
-
Form the black sesame seeds into small balls of about 8 grams and set aside.
-
Take out the glutinous rice dough and roll it into strips.
-
Divide the dough into equal portions, each weighing about 11 grams. Cover the dough with a damp cloth and take one piece at a time to prevent it from drying out.
-
Take out a piece of dough, press it into a round cake, and put the black sesame balls on it.
-
Use the thumb of your right hand to gently squeeze the dough to wrap the black sesame filling.
-
Finally, pinch the closing area tightly.
-
Use your hands to shape the dough into a round shape. Boil water in a pot. After the water boils, add the glutinous rice balls and gently push them with a spoon to prevent them from sticking to the bottom of the pot. After the water boils, cook for a few minutes and turn off the heat.
