If he eats a little spicy food, his stomach will protest. Usually I cook some spicy side dishes or something, but he doesn't care. As for a big battle like hot pot, he couldn't pretend not to see it, so he protested strongly. Fortunately, I have a wide range of hobbies, and it won’t matter if I miss a hot pot, so let it go. ②I rarely make hot pot and I don’t have any useful tableware at home. I can’t take pictures of a large table of dishes either. Hey, this is a flaw, so don’t mention it. ~~~~~~~~~ Pig's trotter hot pot, I personally think it is very enjoyable to eat in winter. In the cold season, everyone sits together and eats hot pot in full swing. The hot pot is steaming, spicy, and fragrant~~~~Winter has become less scary~~~ Moreover, pig trotters can also beautify and nourish the skin, and are suitable for both men and women~~~

The pig's trotters are stewed in advance and used as stock; the specific method: wash the pig's trotters, add cooking wine, blanch the ginger slices, rinse again, put the ginger slices, green onion segments, and appropriate amount of water into a stew pot and stew for 4 hours. After 3.5 hours, add red dates and wolfberry.

Prepare hot pot base ingredients: 500g butter hot pot oil, 1 bag of dried chili pepper, 30g chili powder;

Put the dried chilies and Sichuan peppercorns into a bowl, soak in boiling water for 15-20 minutes, then drain the chili water and only take the dried chilies and Sichuan peppercorns;

Prepare other ingredients: salt, chicken powder, rock sugar, white wine, fermented glutinous rice, ginger, shallots, garlic;

Pour the soaked dried chili peppers and Sichuan peppercorns into the pot;

Add butter hot pot oil;

Pour in the pig's trotters clear soup;

Add ginger, shallots, and garlic; simmer over high heat for 20 minutes;

While cooking hot pot, you can prepare some vegetables: wash the hot pot powder and soak it in water;

Wash mushrooms, lettuce and pea tips separately and drain;

Wash the rice cakes and set aside;

Prepare two servings of dipping sauce: mix appropriate amount of sesame oil, garlic, coriander, oyster sauce, salt, chicken powder, soy sauce, balsamic vinegar, chili powder, spicy millet and green onion;

After the hot pot is finished cooking, add the pig's trotters that have been stewed in advance and let the pig's trotters heat up and let it absorb the flavor; add washed coriander before serving;

Pour the cooked hot pot into the electric pot, move it to the restaurant, and turn on the power. Arrange vegetables and dipping sauces and you're ready to go.
