Separate the egg whites from the egg yolks, and add the butter and sugar together.

Melt butter with sugar added over water.

Beat until smooth and light in color. Add the egg yolk in three additions, mixing well after each addition before adding the next time.

The mixed butter and egg yolk liquid is fluffy and light, so there is no need to beat it too much.

Then, sift in the flour.

Cut and mix into a dough, as long as there is no dry powder, no need to over-knead.

Then, preheat the griddle. During this period, we began to make cookie rings. Break off a small piece of dough, roll it into a long strip, and then connect it end to end to form a ring (my hands were very oily, so I didn’t take a picture of this process.), put it in a preheated spatula, and bake it over low heat. If the long strip is thin, bake only one side; if the long strip is thick, bake both sides. I haven’t looked at the specific time, so I’ll judge by breaking it apart and seeing if it’s still wet inside.

I didn't pay attention when making it, but now in the photo, the cookie circles look like copper coins, with a string of gold coins strung on them, so crispy and sweet.
