When I was working in Wuhan, my brothers always went to the snack bar in the alley downstairs for dinner. There were two dishes from this restaurant that we always ordered, one was half a fish in a wok and the other was minced meat, beans and olive vegetables

  1. Cut off the carob roots and wash them

  2. Chop the beans into small pieces. If the beans are big, chop them thinly. Vice versa, mince the meat as well

  3. Blanch the beans for about 10 minutes. The beans are more resistant to cooking

  4. Stir-fry minced meat in hot oil, olives, green beans, salt and soy sauce. Stir-fry for a while to see if it is cooked. Add a little more water and simmer

  5. It’s ready to be served when it’s cooked. Although it’s a home-cooked dish, it’s delicious
