I believe many people have eaten toothpick meat, but toothpick hairtail fish may be rare. It was also my first time to make it, but the preparation methods are similar. Hairtail is very convenient to eat after deboning. All you eat in your mouth is meat. You don’t have to worry about getting stuck in the spines because you can’t eat it out at all. The fried fish bones are crispy and fragrant, especially delicious.

After cleaning the hairtail, wipe off the water and use a knife to place one side of the hairtail against the bone

Put the hairtail segments and fish bones into a bowl, add cooking wine, white pepper and meat sauce, mix well and marinate for about 20 minutes

Pour more oil into the pot and heat it over medium heat. When the oil temperature is 50% to 60% hot, add the hairtail and fry until golden and take it out (note that the hairtail will explode when fried and the oil will splash everywhere. You can use the pot cover to cover yourself to avoid being burned by the oil. Pay attention to safety!)
