Remove the bones from the Pipa leg, skin side down, and make a few cuts on the meat so that the chicken leg meat can be spread into slices.

Put the chicken in a basin, add cooking wine, salt, light soy sauce, green onion and ginger and marinate for 30 minutes.

Remember to turn over in between.

Heat oil in a pan, place chicken legs in a flat layer and fry over medium heat for 3 minutes.

Fry until golden brown, flip over and fry for another 2 minutes.

Covering the pan while frying will cook it faster.

Fry 2 sides until golden brown, cut into pieces and serve. Chicken is easy to cook, and the lack of blood in the middle means it is ripe.
