Stir-fried loofah with chopped pepper
Overview
A tender little loofah is the first fruit produced by the loofah vine in my mother’s yard. Stir-fried with homemade chopped pepper, it is just the right lunch for me. It is fragrant and delicious, and it is absolutely great with rice!

Peel the loofah, cut into hob pieces, and soak briefly in light salt water.

Put an appropriate amount of oil in the pot and sauté the chopped peppers until fragrant.

Take out the loofah, squeeze out the water, and stir-fry in the pot.

If it is too dry, add an appropriate amount of water until the loofah becomes soft, then add an appropriate amount of salt and chicken essence and take it out of the pot.
