Shrimp and Melon with Black Bean Sauce
Overview
Bitter melons from the south are also called cold melons. They are a little different from bitter melons from the north. They are larger in size, have more meat, and are not too bitter. They are the first choice vegetables for removing internal heat in summer. Stir-fried shrimps with cold melon are beautiful in color and delicious, a good combination!

Clean the shrimps, cut off the heads and tails, and prepare other ingredients.
