scallion oil
Overview
Scallion oil is most commonly used to mix noodles, but it can also be used as a seasoning instead of soy sauce to add a richer salty taste. I often add a little scallion oil to salads, braises and stews, and I am always amazed~ You should try it too~

Cut onions into sections, 20 grams of sugar

Mix the dark soy sauce and light soy sauce, add the sugar as shown in Figure 1 and stir until the sugar dissolves

Put oil in the pot, add star anise and scallions and sauté over medium heat

When the color of the green onions turns brown, pour in the soy sauce in picture 2 and stir (if there is still a little sugar at the bottom of the bowl, add a little light soy sauce, stir and pour it into the pot)

Stir until the soy sauce bubbles and then turn off the heat

Let cool, bottle, and use as needed
