Prepare materials.

Wash the chicken feet, cut off the fingertips, add ginger slices and cooking wine, boil and blanch them again.

Put the blanched chicken feet back into the pot. Be careful not to cook them for too long. They will be cooked in 5-6 minutes.

Soak the cooked chicken feet in cold water. If there are ice cubes, you can also put them in. The purpose is to make the chicken feet not soft and rotten, and have a chewy texture.

Pour a bowl of water into the pot and add the garlic, ginger, star anise and rock sugar.

Add appropriate amount of light soy sauce.

Then add appropriate amount of mature vinegar. Just see the color get darker.

Bring the marinade to a boil over low heat and let cool.

Put the cooked chicken feet soaked in cold water into the cooked marinade and soak overnight.
