Put the pumpkin and sugar into a food processor and puree. If you don’t have a food processor, just mix it up! It's just not that delicate.

Add glutinous rice flour to form a dough, cover with a damp cloth and let rest for 15 minutes.

Get the biscuits and sesame seeds ready.

Divide the risen dough into small portions of 40g, (depend on the size of the biscuits), roll into a round shape, and flatten with your hands.

Spread cold water on both sides of the flattened dough and dip one side into a biscuit.

Stick a layer of sesame seeds on the dough in the middle and hold it tightly with your hands to prevent it from falling off later.

Do them all in order

Heat the oil until it is 30% hot, turn to medium-low heat and fry until golden brown.
