I have been addicted to chicken popcorn for a long time. I learned the oven version and it can be delicious without oil. Chop the chicken breast loosely with the back of a knife and cut into small pieces.

Add small pieces of chicken, pepper, cumin powder, cornstarch, and salt and mix well.

Beat the eggs and add to the chicken, mix well and marinate for 30 minutes.

Grind the oatmeal into fine crumbs in a plastic bag.

Layer in the oatmeal crumbs to coat each piece of marinated chicken evenly.

Place the chicken all coated in oats on a baking sheet lined with greaseproof paper.

Preheat the oven to 190 degrees and bake on the middle rack for about 15-18 minutes. When the surface is golden and the chicken is visibly white, take it out.
