Home-pickled sauerkraut, washed and cut into small pieces.

Wash the Qingjiang vegetable seedlings.

Boil dry rice noodles in a pot under cold water. (Each brand of pho is different, cook according to the instructions.)

Cook until the rice noodles are cooked through, scoop them out and put them in a cold river (rinse them with pure water).

Divide among bowls.

Stir-fry the sauerkraut in a dry pan for 2-3 minutes until the sauerkraut is dry. (It is said that it can remove the bitterness of sauerkraut.)

Add oil and fry.
