Pickled potherb
Overview
Xuelihong refers to the young stems and leaves of mustard, a Brassicaceae plant. It is a variant of mustard greens with leaves in the mustard family. The scientific name is Ardisias quamulosa Presl, also known as Ardisia squamulosa, Potherbaceae, Chun Bu Lao, Shuang Bu Lao, Piao Er Cai, Ta Ke Cai, Xue Li Weng. It is a leafy vegetable in the mustard family. Distributed in Green Island, Orchid Island, Hainan Island, and Sri Lanka. The species is woody. The leaf veins are reticular veins. The flowering period is from March to May. Xuelihong has dicotyledonous leaves, which are alternate and have entire leaf margins. The upper surface of the leaf is dark green and smooth, and the lower surface is light green. Nutritional value: Contains protein, fat, sugar, ash, calcium, phosphorus and iron, carotene, thiamine, riboflavin, niacin, vitamin C, etc. Efficacy of consumption: sweet and flat, non-toxic, detoxifying and reducing swelling, appetizing and digesting, warming and benefiting qi. Improve eyesight and relieve diaphragm. It is mainly used to treat sores and carbuncles, swelling and pain in the chest, cough with excessive phlegm, deafness in the ears and eyes, swollen gums, constipation and other diseases. The roots and stems can promote blood circulation, dispel wind, reduce inflammation and reduce swelling. The fruit has an astringent effect. The leaves treat dysentery and dermatitis.

Harvest the pickles and let them sit in the ground for a day or two until they become wilted.

Clean the pickled vegetables.

Hang the cleaned pickles for two to three days to dry them out.

Cut the dried pickled cabbage into 1cm pieces.

Add the cut pickled cabbage into the salt and rub it repeatedly to fully incorporate the salt into the pickled cabbage. (In the picture, a large basin is cut and half a packet of salt is put in)

The empty oil pot at home can be used for this purpose. Put the kneaded pickles inside. The mouth of the oil pot is small and it is difficult to put it in, so use chopsticks to help.

To install part of the oil, use a thin stick to press it firmly into the oil can.

Fill a pot, wrap it with plastic film and seal the lid, place it in a ventilated place, and you can start eating after opening it for about 20 minutes.
