Refreshing cold eggplant
Overview
Eggplant is delicious, but it absorbs too much oil. The cold way is delicious, less oily, and very healthy. It is a frequent visitor on my summer table

Cut the eggplant lengthwise into several sections and steam them

Steam it until it becomes rotten when you poke it with chopsticks

Wait for the eggplant to cool slightly and then tear into strips

Take a small bowl, add minced garlic, light soy sauce, salt, vinegar, and chili oil, adjust the sauce to your own taste, and pour it on the eggplant. If you are entertaining guests, mix it after serving, otherwise it will not look good
