First, fully soften the butter at room temperature, weigh the powdered sugar with an electronic scale, and stir the powdered sugar and butter evenly.

Beat the butter with a hand mixer until light and feathery in color.

Then add the egg yolk a little at a time, beat the butter thoroughly until even, then add the next egg yolk.

Use a tool to scrape out the orange zest and pour it into the whipped butter.

Weigh the cake flour and add 1/4 tsp of baking powder.

Sift together the flour and baking powder and pour into the butter.

Measure the almond flour and pour it into the cake flour.

Use a scraper to mix the flour and butter thoroughly, seal the dough in a plastic bag and place it in the refrigerator to rest for 30 minutes.

Take out the loosened dough, roll it into a sheet, and use a flower-shaped mold to carve out shortbread.

Use the tip of a chopstick to make a pit in the middle of the flower-shaped shortcake, add strawberry jam, and brush the surface evenly with egg white.

Put it into the oven that has been preheated in advance, and bake it at 170 degrees with upper heat and 130 degrees with lower heat for about 20 minutes. When the surface changes color, you can take it out of the oven.
