【Fried Chicken Sausage Lace Pizza】
Overview
The week passed quietly like this, and it ushered in a happy, relaxing, and busy weekend. The happiness was spending time with the children, the relaxation was not having to worry about three meals a day, and I could sleep until I woke up naturally, and the busyness was because the children were at home and wanted to make more delicious food. This was yesterday's afternoon tea. The grilled fried chicken and sausage lace pizza was filled with chicken popcorn and sausage that the children loved. It was very popular. This lacy pizza is actually something I've always wanted to make, but I've been putting it off. In fact, I myself often can’t explain where my time goes. As soon as you bite into it, you will be greeted by the aroma of chicken popcorn and sausage, soft and stringy cheese, and crispiness mixed with bread crumbs. It tastes very layered. If it is not specially made for children, you can add pizza spices to make it, it is the same.

Mix the pizza base ingredients together and knead into a smooth dough.

Cover with plastic wrap and ferment until doubled in size.

While the dough is fermenting, prepare the filling. Take two chicken legs, remove the skin, bones, and fascia, and cut them into evenly sized pieces.

Add an appropriate amount of Orleans barbecue ingredients and mix well, cover with plastic wrap and marinate in the refrigerator for more than two hours. (Marine in advance or marinate in the refrigerator overnight)

Beat an egg and prepare bread crumbs. Coat the marinated diced chicken with a layer of egg liquid and then a layer of bread crumbs.

Add a little oil to the pot. When the oil temperature is 50% to 60% hot, add the chicken popcorn and fry until it is 70% to 80% cooked.

Remove and drain the oil and set aside.

Cut green and red bell peppers into small diamond-shaped pieces, and cut one sausage into small hob pieces.

Now that the weather is hot, prepare the fillings and the dough is basically fermented. Now let’s shape it. Deflate the fermented dough again, knead it evenly, and take out one third of it to make the lace at the back.

Take two-thirds of the large piece of dough and roll it into a round piece slightly larger than the pizza stone.

Place in a pizza pan, trim the edges slightly, and cover with a plastic wrap. (It’s hot, you can put it in the refrigerator after cooking)

Take one-third of the dough, roll it into a round shape and roll it into a rectangular shape, just wide enough to wrap the sausage.

After rolling out, add sausage.

Roll up starting from the bottom edge. (If the dough is not rolled out well and the width is different, you need to cut off the irregular edges after rolling it out)

Take out the cake bottom from the refrigerator, first use a fork to make some small holes (this can effectively prevent the cake bottom from swelling during baking), cut the rolled sausage into small pieces and place them on the edge of the cake bottom (when placing, add water under the bottom and put it on, so that it sticks very firmly), cover it with plastic wrap, and let it rest for 15 to 20 minutes.

Brush the edge with a layer of egg wash and put it into the oven that has been preheated ten minutes in advance at 180 degrees, middle and lower layers (second to last layer), and bake for about 15 minutes. Bake the bottom of the cake first. (You can also use it without egg wash, but the color will be whiter and not glossy)

Take out the baked cake base.

Brush with a layer of Thai sweet and spicy sauce and a layer of tomato sauce, and put a layer of mozzarella cheese sticks. (You can also directly apply tomato sauce or pizza sauce)

Add chicken popcorn, sausage, and green and red bell peppers.

Spread another layer of mozzarella cheese sticks.

Place in the oven and continue baking for 15 minutes until the mozzarella cheese is completely melted. (I still put it on the middle and lower layers. If you like the surface to be slightly colored, you can bake it on the middle layer, or change it to the middle layer later)
