Rice cake
Overview
Children's Day is coming soon. I made this cake to give to my children and wish all the children the best. The so-called rice cake is made of aged rice flour. Why is it aged rice flour? Whether other powders will work is unknown. But I just had a little pot flour left at home, so I substituted low-gluten flour. The effect is good, you can try it. I would like to take this opportunity to wish the food world a happy life.

The method is the same as chiffon cake. Separate the egg whites from the egg yolks. Be careful not to have any traces of water on the egg whites, otherwise they won’t be able to whip.

The key to making this kind of cake is whipping. If the whipping is successful, the result will not be too far off, I think.
-
Beat the egg yolks and add rice flour. If you want to add some milk or other flavors, I think it's okay. Just be careful about the foods you avoid.

This is the prepared egg liquid. Add about a tablespoon of rice flour and it will be a little batter. The method is similar to chiffon cake. Now you can preheat the oven.

Mix the beaten egg whites with the prepared egg yolks, then level the egg batter and put it in the oven. After baking, the surface was a little burnt, so I didn’t take a photo. In fact, I left some egg whites for other uses, and I don’t know if other low-gluten flours can also be substituted, such as biscuits. Finally, I wish you all a happy life, thank you.
