Overview
There are many ways to wrap zongzi. Below, I will introduce to you the wrapping method of long rice dumplings. This wrapping method is very easy to use and can easily wrap the shape. Moreover, because it is tightly tied, it is not easy for rice to leak when cooking. In addition, this red bean rice dumpling combines the aroma of rice, bean and rice dumpling leaves, with moderate sweetness and rich nutrition. Those who like it must try it~

Steps
-
Prepare ingredients. 500 grams of glutinous rice, 100 grams of red beans, appropriate amount of rice dumpling leaves, and a few rice dumpling ropes. (It’s best to choose round-shaped glutinous rice, which will have a stickier and glutinous texture.)
-
Wash the glutinous rice and soak it for five or six hours.
-
Wash the red beans and soak them for two hours.
-
Clean the rice dumpling leaves one by one, then put them in a hot water pot and cook for 15 minutes. After cooking, take them out and put them in cold water and set aside. (The boiled rice dumpling leaves will be more flexible and will not break easily when wrapping. In addition, I use fresh rice dumpling leaves. If you use dried rice dumpling leaves, be sure to soak them in advance before cooking.)
-
Drain the glutinous rice and red beans, then mix together.
-
Start making rice dumplings. Take two rice dumpling leaves and cut off the hard corner at one end, as shown in the picture.
-
Lay the two rice dumpling leaves flat and fold them in half, as shown in the picture.
-
Fold both ends of the leaf toward the middle, as shown in the picture.
-
Pick up the rice dumpling leaf and open it. There will be a pocket shape in the middle. Then put a few spoonfuls of rice into the rice dumpling leaves, as shown in the picture. Press firmly with a spoon.
-
Wrap the glutinous rice with the rice dumpling leaves on the side, as shown in the picture.
-
Take a rice dumpling rope and tie the rice dumplings together.
-
After all the rice dumplings are wrapped, put them in the pot and cook. (It is recommended to put cold water into the pot, and the water should soak the rice dumplings. After boiling over high heat, turn to medium and low heat and cook for 1 hour, then turn off the heat and simmer for 30 minutes to 1 hour. Do not add any more water during the cooking process. In addition, if you find it troublesome to cook the rice dumplings in an ordinary pot, you can use a pressure cooker for 20-30 minutes, and then simmer for a while longer.)
