  1. Blanch the ribs in a pot, then remove and drain.

  2. Pour oil into the pan, add aniseed, cinnamon and peppercorns and sauté over low heat until fragrant, then add ginger and garlic and sauté until fragrant.

  5. Add light soy sauce and appropriate amount of dark soy sauce. (A little more light soy sauce is used because no salt is added in the whole process. The salt flavor of light soy sauce is completely relied on to add flavor. Dark soy sauce is just for coloring.)

  6. Stir-fry until the ribs are coloured.

  7. Pour water into the pot to cover the ribs. (Test the taste after the water is boiled. If it’s too light, you can add some light soy sauce.)

  8. Heat the pot over high heat until the water dries up, collect the soup, and add some sesame seeds.
