Ingredients that need to be prepared: Rodo pepper, pickled ginger in oil, pickled pepper, millet, pepper, Lee Kum Kee flavor, soy sauce, garlic, minced ginger, bean sprouts, salt, chicken essence and MSG (I usually don’t add chicken essence and MSG when cooking).
-
Wash the fish and mark it with lines as shown.
-
Mix with sauce. Mix 20 grams of soy sauce, 1 gram of salt, 1 gram of chicken essence, 5 grams of cooking wine, 20 grams of green pepper oil, 5 grams of minced garlic, 20 grams of bean sprouts, and 20 grams of chili powder.
-
Spread the sauce evenly on the fish body, smear it several times, then add the green onions to the sauce, and stuff the sauce into the fish belly.
-
Wrap the fish in tin foil, leave it for 20 minutes, and bake over the fire or in the oven. Be sure to turn over when grilling over fire to prevent burning. When it's almost done, open the tin foil and apply or brush a small amount of vine pepper oil onto the fish body. Close the tin foil and continue to bake for another minute~
-
Stir-fry the sauce, put some oil in the pot, add pickled peppers, pickled ginger, pickled pepper water, green onion segments, millet peppers, garlic slices, and vine pepper oil, stir-fry to bring out the aroma and spiciness, then add a small amount of salt, chicken essence and MSG, pour the sauce on the grilled fish, and garnish with some green onions and coriander.
