Raw carob beans and eggplant.

Wash the eggplant and cut into small pieces. Soak in water for five minutes, take out and marinate with a little salt for a few minutes to remove the water and squeeze dry.

Pick long beans into finger lengths, wash and set aside.

Prepared minced meat in advance.

Blanch the long beans in boiling water (add a little salt) for five minutes and remove.

Heat oil in a pan, add minced meat and fry until it changes color.

Add eggplant and stir-fry.

Push the minced meat and eggplant to the side, add a spoonful of bean paste and saute until fragrant.

Add the beans and stir-fry.

Fry evenly and cover with a lid. When it simmers over low heat for about five minutes, add a small spoonful of light soy sauce and stir evenly before serving.
