Crucian carp tofu soup is the first dish I learned. It is very easy to make and tastes delicious. It is said to have the effect of beautifying the skin.

First, you need to deal with crucian carp. If you want to remove the fishy line, you need to cut a knife at the back of the fish's head and draw out part of the fishy line. Then, cut a knife at the tail of the fish and pull out the fishy line while patting the fish. You need to clean the black film inside the fish maw, and then touch the salt on the fish. You can also touch the inside of the fish maw. The salt should be within half a tablespoon. Then pour in cooking wine, add green onions and marinate for a quarter of an hour. I don’t have green onions at home, so I use spring onions instead.

Heat the pan with cold oil. You can add a little more oil. Add the crucian carp and fry one side first. When the fish turns golden, turn it over. Sprinkle a little salt or add ginger in the pan to prevent it from sticking to the pan.

After the crucian carp is fried, add the scallions and cooking wine used to marinate the crucian carp. Add an appropriate amount of boiling water. When the water boils, add the crucian carp and cook.

After the soup turns white, add the old tofu cut into pieces. It can also be soft tofu according to your taste. Boil for about 12 minutes. Add half a tablespoon of salt, white pepper, and chives, and it is ready to serve
