I owe this recipe to my great mother. I first tasted my mother's fried apple ribs, and then I discovered that fruits can play such a role in cooking. The flexibility of making spareribs is very high, and coupled with the fragrance of apples and the sweetness and sourness, it really makes people want to eat. Here I will share with you my own method of making it. Although I always feel that it cannot match the taste of my mother’s cooking, it is a good idea and everyone is welcome to try it. Have materials ready. Two ribs (about half a catty); two apples. I chose the Royal Gala fruit. The meat is relatively pink, so it is easier to taste when cooked. (If some students like crispier apples, you can try the Red Fuji...)

Cut the ribs into cubes, add salt, cornstarch, light soy sauce and minced garlic in order, stir and marinate for about ten minutes.

Peel the apples and cut them into pieces about the same size as the ribs. Soak them in light salt water to prevent the apples from changing color.

Soudren recommends preparing two tablespoons of aged vinegar and adding it during stir-frying to make the whole dish richer in flavor.

Add a small amount of oil to the pan and stir-fry the marinated pork ribs until both sides are slightly browned.

Cover the pot and let it simmer for a while. Be careful not to add additional water to simmer the ribs. If you don't want it to be too burnt, just turn down the heat. Bake for 7 to 8 minutes and set aside.

Heat a small amount of oil in another pan, add the apple chunks separated from the water and stir-fry until the edges of the apple chunks begin to soften.

Add the previously fried pork ribs and stir-fry for a while. At this time, you can add two tablespoons of mature vinegar and an appropriate amount of sugar, and season as you like.

Cover the pot and simmer over low heat for about 5 minutes.
