Braised Pork, Beans, Noodles and Melon

Cut the pork belly into small strips and set aside

Pick and wash the beans, drain and set aside

Peel the Japanese melon and cut into small pieces. (I took a photo before cutting into pieces, haha)

Add water to the pot and bring to a boil. Pour in the pork belly for a while, remove and drain

Add a little oil to the wok, add an appropriate amount of sugar, turn to low heat, and wait until the sugar slowly melts

Add pork belly, add a little dark soy sauce and stir-fry until browned.

Add a pound of water, star anise, cinnamon bark, bay leaves, peppers, green onion segments, and ginger slices (the green onions and ginger were not added when the photo was taken). Bring to a boil over high heat, cover, and reduce to low heat and simmer.

Turn on the other stove, add appropriate amount of oil, and stir-fry the beans until wilted.

Remove the star anise, cinnamon bark, bay leaves, scallions and ginger slices from the braised pork pot and throw them away (I kept the red pepper, haha). Pour the braised pork pot directly into the pot of stir-fried beans. Please note that oil may splash out, safety first~

Bring to a boil over high heat, add noodles and cover with lid. Simmer over medium heat for 10 minutes and the melon will be cooked. Add salt and MSG before serving.
