Coconut Pumpkin Mochi
Overview
Mochi is a kind of glutinous rice food, soft and sticky, and is a Japanese snack. I think it is very similar to the donkey rolling in Beijing. The method and ingredients are similar. But the mochi I made has no filling. I mixed the pumpkin puree into the glutinous rice flour. Once it’s ready, chill it and it’s a delicious little dessert!

Prepare materials

Put the sugar into the water and stir to dissolve

Pour the glutinous rice flour, Chengfen and sticky rice flour into the sugar water

Mix into a paste

Stir in pumpkin puree

Mix pumpkin puree and batter evenly

Take a plate, apply some salad oil, pour the flour paste

Put in the pot

Cover and steam until cooked through, about 15 minutes

Take it out, use chopsticks to stir the dough until it is firm, let cool and set aside

Take a plate and put down the grated coconut

Use a spoon to scoop out a spoonful of dough and put it into the coconut
