Pan-fried yellowtail
Overview
Yellowtail fish in English is yellowtailfish, a deep-sea fish with relatively firm meat. Either pan-fried or braised.

Wash the yellowtail fish, wipe off the water, add salt and black pepper and marinate for more than 30 minutes. (I usually marinate it at noon and fry it at night).

Add oil to a non-stick pan, add the fish pieces and fry over medium-high heat for 1 minute to lock in the moisture.

Flip and cook for 1 minute, then turn to low heat and cook for 3-4 minutes.

Turn over and continue frying for 2-3 minutes.

Sprinkle with chopped green onion and serve.
