Overview
This is a very easy but addictive method of cooking potatoes. The rich vegetable stew is paired with rice and delicious fried potatoes, which is always mouth-watering~

Wash the potatoes, peel them and cut them into small pieces

Heat the oil, when it is hot reduce the heat and add mustard seeds and when it makes a crackling sound add cumin and fry for a few seconds.

Add potato cubes and green chilies (you can add an appropriate amount of curry leaves or onions to the pot at this time) and fry over medium heat for 4-5 minutes. Be careful to turn the potato cubes frequently. Reduce the heat to low, add turmeric powder and cover the pot and simmer for 10 minutes. After 10 minutes, remove the lid, add salt to taste, and mix well.

Cover the pot and continue to cook over low heat until the potatoes are tender. When it's almost done, remove the lid and turn over medium heat, stirring constantly. [Be careful not to cover the pot] Wait until there is a nice brown shade on top, be careful not to burn it, this process will take about 7-10 minutes.
