Honey grapefruit tea

Honey grapefruit tea, this big pot just uses one grapefruit. My honey is wild honey given by a friend. The color is a bit dark and the taste is very pure. I made it myself and it is genuine. "Compendium of Materia Medica" says that grapefruit is sweet and sour, cold in nature, and has the effects of regulating qi and reducing phlegm, moistening the lungs and clearing the intestines, nourishing blood and strengthening the spleen. It can cure symptoms such as undereating, light mouth, and indigestion. It can help digestion, eliminate phlegm and thirst, and regulate qi and dissipate stagnation. Rub the grapefruit peel repeatedly with salt and rinse with water.

Use a paring knife to peel off the outer yellow part of the grapefruit peel, making it as thin as possible.

Scrape off the white part inside the peeled skin.

Cut into thin strips.

Put it in a container, add an appropriate amount of salt, and rub it vigorously, then wash it off with water. Repeat this several times to remove some of the bitter taste.

Soak in salt water for a longer time. I soaked it for almost 20 hours.

After draining, add salt and water to a casserole and cook for a while to remove the bitter taste.

Peel out the grapefruit flesh.

If you have time, you can separate the grapefruit flesh into pieces. If you don't have time, you can add a small amount of water and put it in a food processor to smash it like I did. Just beat it a little and keep the pulp in a granular shape.

Add rock sugar to the crushed grapefruit flesh and skin and cook in a casserole (water was added when crushing, so there is no need to add water here).

After boiling, simmer over medium-low heat for about an hour, stirring constantly until thickened. Let cool, add honey, and store in an airtight jar. It can be eaten after a week and washed with warm water.
