Braised pork with pickles and potatoes

I made it for my dad on his birthday and it was well received. You know, it’s not easy to get praise from dad, a chef!

Soak the prunes in water, wash away impurities, and chop into small pieces

Pour the pork belly into a pot with cold water, add star anise, ginger and bay leaves, and cook the meat over high heat

After the water boils, skim off the foam, cook the meat until medium done, and take it out

Coat the pork skin with dark soy sauce while it's hot, and poke the pork skin with a fork or toothpick

Fry the pork belly in the pan until the pork skin turns color. Be careful not to get burned during this step

Let the fried pork belly cool and slice into pieces, then place them in a container with the potato slices

Heat up the oil pan, add garlic slices and sliced prunes and stir-fry, add appropriate amount of salt and dark soy sauce

Place the fried prunes on top of the meat and potato slices, put them into the electric pressure cooker and steam for 20 minutes

After steaming, place it upside down on a plate
