Overview
When cooking the glutinous rice lotus root, I added red dates, red beans, rock sugar, brown sugar, and lotus seeds to the soup. The finished product was not only a glutinous rice lotus root dish, but also a sweet and delicious health tea with the aroma of dates, lotus seeds, and lotus roots. The sweetness of the rock sugar and brown sugar was clearly revealed in the mouth.

Wash the glutinous rice and put it in a bowl with water.

Wash and peel the lotus root, and cut it 3 or 4 cm away from the head.

Put the lotus root upright in the bowl, use a spoon to pour water and glutinous rice into the lotus root hole, you have to be patient. As the glutinous rice grains continue to enter the lotus root holes, the water is squeezed out. Slowly fill the lotus root holes.

Replace the cut piece of head and secure it with toothpicks. You can poke some small holes in the lotus root body with a toothpick to make it more flavorful when simmered.

I use a ceramic pot, put the lotus root joints in, add water that has not covered the lotus roots, and add lotus seeds and red dates to the pot.

Then put rock sugar, brown sugar, and red beans into the pot. Bring to a boil over high heat and simmer over low heat for 2 hours. After cooking, soak for a few more hours before taking out the slices and serving them on a plate. The boiled lotus root soup can be drunk as a health tea, or eaten with lotus root slices, both of which are sweet and delicious.
