Let it ferment in the barrel until it has doubled in size. Dip your fingers in flour and press it gently to check. It does not spring back or dent

Cover with plastic wrap and let it continue to ferment until it is about 8 minutes full. Brush the surface with egg yolk water and bake in a preheated 165 degree oven for 55 minutes
