Fried Mushrooms
Overview
This mushroom was originally intended for hot pot, but because there were too many ingredients, it was not used. Recently, I happened to get a recipe for crispy fried batter. I was itching to fry it. The finished product was crispy on the outside and tender on the inside. It was quite delicious when dipped in tomato sauce. The key to crispy fried batter is sweet potato starch. Adding it will keep the fried shell firm and not soft. This paste is also very nice for making short crispy pork. I have published a recipe for fried enoki mushrooms before. Prepare the ingredients, wash the oyster mushrooms, remove the roots and tear them into small florets. (This is actually not a real oyster mushroom, but I don’t know what it is called. It feels very similar to oyster mushrooms. Anyway, other mushrooms can also be used).

Prepare crispy fried batter - flour and sweet potato starch 1:1, add a little salt and sugar to adjust the base taste, it's OK if you don't add it, pour in the cooking oil, and then slowly add water to make it thick like yogurt. The amount of water here is not certain, it mainly depends on the condition, and it doesn't matter whether it is thicker or thinner.

The mushrooms are rolled in crispy fried batter and covered with crispy fried batter.

When the oil temperature rises to about 170°C, if you don't have a thermometer, just put the chopsticks into the oil until dense small bubbles form around the chopsticks.

Put the battered mushrooms into the oil pan and fry slowly over low heat. Don't move them until they float. Use chopsticks to pull them apart and fry for another 1 to 2 minutes.

This process is to fry the mushrooms until the surface becomes hard and turns golden brown, then remove and drain the oil.

Place in the air fryer basket, lay it flat, and heat at 200°C for 3 to 5 minutes. It depends on the temperament of your air fryer. You can open it at any time to check the status. If you don't have an air fryer, you can also raise the oil temperature to 200°C and fry again. The re-frying time should not exceed 1 minute.
