Bitter Melon Omelette
Overview
Bitter melon omelette is one of my favorite dishes. The mellow aroma of the eggs offsets the bitterness of the bitter melon, and the preparation is simple.

Cut the bitter melon into cubes, marinate it with salt for 5 minutes, then grasp it with your hands until the bitter melon becomes soft, rinse it, squeeze out the water and set aside.

Beat the eggs with appropriate amount of salt and rice wine, pour in the processed bitter melon and mix well.

Add oil to the pan, heat it up, pour in the egg liquid, and fry until both sides are golden brown.

Slice out of the pan.
