I've always had a soft spot for vegetarian tofu. Tonight, I will have a dish of mapo tofu.

Steps

  1. Prepare ingredients: tofu, pork essence, Pixian bean paste, pepper, minced ginger, minced garlic, chopped green onion.

  2. Slice the tofu and then cut it into 2cm square pieces.

  3. Pork essence is minced with a small amount of fat.

  4. Heat oil in a pan.

  5. Saute peppercorns until fragrant.

  6. Scoop out the browned peppercorns and discard.

  7. Pour in the minced ginger and garlic and sauté until fragrant.

  8. Add 1 tablespoon of Pixian bean paste and stir-fry until red oil appears.

  9. Pour in the minced meat and stir-fry.

  10. Add water to the pot and add light soy sauce to enhance the aroma (because the bean paste contains a lot of salt, there is no need to add salt).

  11. Add dark soy sauce for color.

  12. Bring the minced meat and sauce to a boil.

  13. Pour in the tofu cubes and simmer for 2 minutes to absorb the flavour.

  14. Add water starch to thicken.

  15. Turn off the heat and put it into a soup basin.

  16. Sprinkle in the chopped green onion and serve.
