Cut the lamb leg in half and make a few cuts with a knife. Add salt, onion, ginger, red wine, fennel, chili and cumin powder and massage for a few minutes. Seal with plastic wrap and marinate overnight in the refrigerator

Wrap in tin foil and bake in the oven at 230 degrees for three hours

Take it out, remove the tin foil, and bake at 230 degrees for another five minutes
