Cut the loofah into pieces of similar size with a hob, beat the eggs and set aside, and smash the garlic.

Put oil in the pot, fry the egg yolks and set aside.

Put the loofah in the pot and stir-fry. The loofah will release water. Personally, it is recommended not to add more water. Stir-fry until the loofah is soft and waxy.

Add eggs and stir fry. Stir well and add appropriate amount of salt and a little light soy sauce to taste and it is ready to serve
