Matcha cookies
Overview
Matcha biscuits have always been my family's favorite. I like the fragrance of matcha. I usually roll them into pieces and then press them into molds. This time I used a mooncake mold to press out cartoon patterns. My little baby couldn't put it down. Cartoons are a weakness of babies. Even if they don't like eating, they will hold them in their hands for a long time when they see the cute cartoon shapes, and then they will eat one without even realizing it

Mix matcha powder and cake flour evenly, sift and set aside

Soften and whip butter

Add powdered sugar and salt and continue to beat

Add the egg liquid in three batches, beating evenly after each addition before adding the next time

After whipping, it will become flocculent (preheat the upper and lower tubes of the oven to 170 degrees)

Add sifted matcha powder and cake flour, mix well with a silicone spatula

After mixing, let the dough rest for 10 minutes

Divide into small balls of about 15 grams

Use the mooncake mold to cut out your favorite flower shape

Place in the preheated oven at 165 degrees for the upper tube and 175 degrees for the lower tube, and bake for 15 minutes
