Grilled Eggplant with Garlic Minced Pork
Overview
Occasionally I saw this recipe, which is very similar to the meaty eggplant I used to make, except that it is grilled. I tried it today. The first time it was baked, it didn’t taste as good as the fried one. Later, after a friend’s advice, I learned that I should steam it first and then bake it.

Wash and cut the eggplant into sections, then cut it in half and make a few slits. Brush with a layer of salad oil, preheat the oven to 200 degrees and bake for 15 minutes, or steam for 15 minutes.

While steaming and grilling the eggplant, prepare to fry the minced meat. Marinate the minced meat with light soy sauce and cooking wine for a while, and mince the green and red peppers and garlic cloves.

Heat oil in a pan, stir-fry minced green and red pepper and garlic until fragrant, set aside

Stir-fry the minced meat in the oil pan again, add water, black bean paste and bean paste.

Add the green and red peppers that were fried before, mix well and serve.

Pile the fried minced meat on top of the first cooked eggplant.

Bake it in the oven for 20 minutes and it's ready to eat.
