  1. Make honey beans first. After cleaning all kinds of kidney beans, soak them in water for one night. The kidney beans have thick skin and are relatively hard. They need to be soaked for at least 8 hours to make them taste softer and glutinous. I soaked it for a day and night and it tasted very good.

  2. Pour the red kidney beans into the rice cooker, add appropriate amount of water, cover with sugar and press the pressure cooker lid until cooked. Add sugar according to your own taste. If you like sweetness, add more sugar. If you like original flavor, add less sugar.

  4. Pour the tapioca flour and glutinous rice flour into a bowl. The ratio of tapioca flour to glutinous rice flour is 2:1. If there is too much glutinous rice flour, the crystal cake will not be translucent.

  7. After it is no longer hot, use your hands to knead it into a ball. It should not be too soft. Add as little water as possible and it can form a ball. Cover it with plastic wrap and let it rest for 20 minutes. Glutinous rice flour and tapioca starch are relatively delicate, so the dough should not be too soft. If it is too soft, it will not be easy to shape after steaming.

  8. Knead the rested dough evenly on the cutting board, roll it into long strips, and then cut it into even segments with a knife.

  9. After everything is cut, put it into a steamer. Line the bottom with silicone paper or brush oil directly on the steamer. Do not use a drawer cloth! Don't use drawer cloth, it will be very sticky. If you use drawer cloth, it will be so sticky that you can't take it off.

  10. After everything is coded, put it into the steamer. After the water boils, continue to steam for about 15 minutes. It is best to take it out after steaming for 5 minutes.
