Walnut cheese
Overview
Walnut kernels are rich in nutrients, with 15 to 20 grams of protein per 100 grams, 60 to 70 grams of fat, and 10 grams of carbohydrates; and contain various trace elements and minerals such as calcium, phosphorus, and iron necessary for the human body, as well as carotene, riboflavin and other vitamins. The main component of the fat contained in walnuts is linoleic acid glycerol. Not only does it not increase cholesterol after eating, it can also reduce the absorption of cholesterol in the intestines. Therefore, it can be used as a tonic for patients with hypertension and arteriosclerosis. In addition, these oils can also supply the brain matrix needs. The trace elements zinc and manganese contained in walnuts are important components of the pituitary gland. Regular consumption is beneficial to the nutritional supplement of the brain and has the effect of strengthening the brain and improving intelligence.

Steps
-
Soak the rice in water for a day and night
-
Soak the red dates in water (I soaked a little too much red dates, but only used about half)
-
Soak walnut kernels in boiling water for 1 hour
-
Peel after soaking (this step is more troublesome, you need to be patient)
-
Put the red dates into the pot and boil for a while, about 4 or 5 minutes
-
Take out the boiled red dates, cool them, peel and core them and get the date puree
-
Crush the peeled walnut kernels with a food processor, the more crushed the better (I added half a bowl of water directly to the process)
-
Put the soaked rice into a food processor, add an appropriate amount of water to make the rice milk, and then use a filter to filter out the rice residue, leaving only the rice milk
-
Prepare the casserole
-
Pour in the chopped walnuts, rice milk, and jujube paste, bring to a boil over low heat and cook for 5 minutes. It is best to watch by the side to prevent overflowing (I added some water appropriately, otherwise I think it is too thick, you can adjust it according to your own taste)
-
Before turning off the heat, add an appropriate amount of sugar, don’t add too much
